"Cattle" is always "cattle". On no account should the word "cattle" take on 's'.
Cattle: Ruminant animals with horns and domesticated for meat or milk, or as beasts of burden.
"Cattle" includes cows, oxen, yak, bison, and buffaloes. The cattle family also includes sheep, goats and antelopes.
May I stress that the word cattle is plural in form and meaning.
Example:
The Bible says that "the cattle upon a thousands hills belong to the Lord (not "cattles").
